Salmon canapes are the most classic New Year's appetizer, this year I propose them instead of a veil of butter and a slice of smoked salmon on the surface, with a delicate salmon mousse enriched with pink peppercorns. Method
How to make canapes with salmon mousse
Put the salmon, cheese, butter, lemon juice and pepper in a blender
Blend everything until you get a homogeneous mousse
Take the slices of bread for sandwiches and put them in a pan with a knob of butter to toast them on one side only
With a cookie cutter, make some bread stars or cut each slice into squares
Spread the salmon mousse on the side of untoasted bread and garnish the Canapes with salmon mousse with pink peppercorns or chives and serve
