Freselle are a kind of baked bread, cut in half and made to biscuit in the oven, typical of Campania, Calabria and Puglia. With this recipe, you can prepare the dough comfortably with the Thermomix and use the freselle obtained to stuff them with tomatoes, salad and mozzarella or by breaking them up and using them as an accompaniment to tasty soups.
How to make freselle with the thermomix
Put the lukewarm water with the brewer's yeast in the mug and blend for 5 sec. at vel. 4.
Add the flour and salt and knead for 1 min. and 30 sec. at speed 5.
Obtained a soft and homogeneous dough, cover and let rise for 2 hours.
Then take the dough and divide it into 5 smaller loaves.
Work them with your hands to form 5 loaves, which you will close to form donuts.
Place them on a baking sheet covered with parchment paper and let rise for another 40-60 minutes.
Bake in a preheated oven at 175 ° C for about 20 minutes.
Remove from the oven, then cut each donut in half horizontally.
Put the half donuts back on the baking sheet, with the cut side facing up, and bake at 160 ° C for another 30 minutes.
Once ready, let them cool then serve immediately or keep the freselle in tightly closed bags.
