Lamington are typical Australian sweets, it is a sponge cake cut into squares, each square is dipped in chocolate glaze and then passed in grated coconut.
I have always liked the combination of fruit with chocolate, that of dark chocolate and coconut is now tested in my home, everyone likes it and that's why yesterday afternoon I took a moment to relax to prepare the Lamington for the whole family. I brought a tray of chocolate and coconut squares to my mom, one to my mother-in-law and one to my grandmother. I am destroyed, the kitchen is a mess with splashes of chocolate glaze everywhere, but it was worth it!
How to make chocolate and coconut squares (Lamington)
Whisk the eggs with the sugar for a long time.
Slowly add the flour, boiling water and finally the baking powder forming a frothy mixture.
Spread the mixture on the baking sheet covered with parchment paper. Level it and bake at 160 ° C for 30-40 minutes.
Allow to cool and cut the pan into squares with a sharp knife.
Meanwhile, prepare the chocolate glaze by placing the chocolate, milk and butter in a saucepan
Melt gently over low heat or in a bain-marie, stirring often to mix all the ingredients well.
Allow the icing to cool and, one at a time with the help of a meat tongs, dip the squares of cake, wetting all sides well in the chocolate icing.
Arrange the dehydrated coconut flour on a flat plate and immediately after bathing in the chocolate glaze, roll the lamington in the grated coconut.
Place the lamingtons in a very large tray as they are ready.
Refrigerate for 1 hour, then arrange the chocolate and coconut squares on a serving dish and bring to the table.
With this dose come about forty sweets, then it depends on how big you decide to make the squares.
