THE pumpkin sandwich they are a tasty idea to bring a second course with a different side dish to the table. The idea is quite simple: 2 slices of pumpkin are stuffed with a little provolone and then closed as a sandwich, after which they are breaded and fried (or baked). A sort of vegetarian cordon bleu, if you like. The result, I don't even tell you, is an explosion of taste: the sweet of the pumpkin, very soft after cooking, goes perfectly with the smoked cheese of the stringy provolone and together contrast beautifully with the crispy flavored crust. In short, a simple idea, of course ... but we all know that sometimes the simplest ideas are also the most brilliant, right? ;)
How to make pumpkin sandwiches
Clean the pumpkin and cut it into slices of about 1-2 cm.
Prepare the breading: finely chop the garlic and parsley, then mix them with Parmesan and breadcrumbs.
Cut the provolone into slices.
Now assemble the sandwiches: put a piece of provolone on a slice of pumpkin, close with another slice of pumpkin, then pass everything, as if it were a cordon bleu, first in the lightly beaten eggs, then in the breading, trying as much as possible to seal the edges of the sandwiches with the breading.
Now proceed with cooking, with very hot seed oil if in a pan, or in a ventilated oven: sprinkle with a little oil and cook for about 30 minutes or until golden brown at 200 ° C.
The pumpkin sandwiches are ready, lightly salt and serve immediately.
