The mimosa eggs are hard-boiled eggs stuffed with a cream based on tuna and mayonnaise to which an anchovy, parsley and capers are added. They are then decorated with crumbled hard yolk to obtain the mimosa effect and hence their name;)

How to make mimosa eggs

Prepare the hard-boiled eggs by boiling them in a saucepan with water for 10 minutes.
When they are ready, let them cool completely, then peel them.

Then cut them in half and remove the yolk with the help of a teaspoon.

In a small bowl, mix half of the yolks with tuna, mayonnaise, capers, anchovies, parsley and salt until you get a cream.

Transfer everything to a pastry bag and stuff the previously emptied eggs.

Now grate the remaining egg yolks onto the filling.

Decorated with pink peppercorns, your mimosa eggs are ready to serve.
